How to make garlic parmesan shrimp pizza?

  • For the dough
  • 2 1/2 cups Caputo 00 flour

  • 1/2 tsp brown sugar

  • 1 tsp active dry yeast

  • 1/2 tsp sea salt

  • 1 cup water

  • 1 Tbsp extra virgin olive oil

  • 1-2 tsp semolina flour (for dusting)

  • For the herb oil
  • 2 Tbsp extra virgin olive oil

  • 1/4 cup fresh parsley (chopped)

  • For the shrimp
  • 20-30 medium-sized shrimps (shelled & deveined)

  • 1 Tbsp olive oil

  • 1/4 tsp salt

  • 1 tsp garlic (peeled & crushed)

  • Other toppings
  • 1/3 cup parmesan cheese

  • 15-20 small mozzarella cubes

Directions

  • To make the dough
  • Pour the warm water into the KitchenAid bowl. Mix the sugar and sprinkle the yeast on top. Let it sit undisturbed for 10 minutes till the surface turns foamy.
  • Add the flour, sea salt, and oil. Attach the paddle and run on low speed for 8 minutes till all the ingredients combine and form a smooth dough.
  • In case the dough sticks to the sides, sprinkle some flour, scrape the sides, and finish kneading. If the dough seems dry, sprinkle a little water and knead for a few minutes.
  • Transfer the dough to an oil-greased bowl. Roll the dough to coat it with oil. Cover the bowl and set aside to proof for 1 hour at a warm spot.
  • Divide the dough into two equal parts. Keep one portion in an airtight container and store it in the fridge for 2-3 days.
  • To prepare the shrimp
  • Pat dry the shrimps and transfer them to a bowl. Add the salt and garlic. Mix well and marinate for 5-10 minutes.
  • Heat the olive oil in a skillet.
  • Add the shrimps and spread them in a single layer. Cook for 60-90 seconds over medium heat till they change color slightly. Flip using tongs.
  • Remove into a bowl. Do not leave the shrimp in the skillet, as the skillet’s residual heat will overcook the shrimp.
  • To assemble the pizza
  • Preheat the oven to 500° F with the pizza stone placed inside.
  • Dust some flour on the kitchen counter, place the dough ball, and roll it into a 12-inch circular shape.
  • Dust some semolina on the pizza peel. Transfer the rolled-out dough to the peel.
  • Mix the extra virgin olive oil with freshly chopped parsley in a small bowl. Brush it on the raw crust.
  • Sprinkle a thin layer of parmesan cheese. Top with the slightly cooked shrimp, leaving a little gap between each. Place the mozzarella cubes in the gaps.
  • Carefully shift the assembled pizza into the stone of the preheated oven. Bake for 5-8 minutes at 500° F till the crust turns brownish and the mozzarella melts.
  • After removing the pizza from the oven, let it cool for 2-3 minutes. Slice and serve right away.
